Delicious natural rock oysters are served with a zingy and refreshing chilli vinaigrette.
1 dozen rock oysters
1 red chili, finely chopped
1 lime, juiced
½ lemon, juiced
1 tsp sugar
Freshly cracked black pepper
A good glug of olive oil
1 tsp ground cardamom
Freshly chopped coriander leaves
1. Combine all the vinaigrette ingredients and season with salt and pepper. Add about a tablespoon of the dressing to each oyster.
