Malva pudding is a favourite South African dessert. It’s perfect for a large get together because it’s so easy to make. The best part about this sweet, spongy pudding is the delicious sauce that is poured over the hot pudding.

It is a very sweet dessert that is usually served with cream, ice-cream, or custard. It has a kind of cake texture and it can be made easily with just a few simple ingredients.
Ingredients
Sponge
1 cup castor sugar
2 eggs
1 Tsp apricot jam
1 1/4 cups cake flour
1 tsp bicarbonate of soda
Pinch of salt
2 Tsp SUNSHINE D ORIGINAL MARGARINE
1 Tsp vinegar
1/2 cup milk
Sauce
1 cup of cream
115 g SUNSHINE D MARGARINE
100 g sugar
1/2 cup of water or orange juice
Method
Sponge
Preheat the oven to 180oC. Sift all the castor sugar, cake flour, bicarbonate of soda, and salt in a bowl. In a separate bowl, beat the eggs until light and fluffy, and then beat in the jam. Melt the margarine in a saucepan on the stove, and then add the vinegar and milk. Add the dry ingredients and SUNSHINE D ORIGINAL MARGARINE mixture to the egg mixture. Mix until well blended. Pour into an ovenproof dish and bake for 30 minutes.
Sauce
In a saucepan, combine and melt the cream, SUNSHINE D ORIGINAL MARGARINE, sugar, and water or orange juice on the stove. Pour over the sponge when it comes out of the oven.

The sponge is a straightforward recipe, but you can get really inventive with different sauces. We’ve provided a traditional sauce for this recipe, but you can substitute the orange juice for something like naartjie or chocolate.
The dessert is best served with cream, ice-cream, or custard.
How To Make Malva Pudding In The Microwave
Ingredients:
For the batter:
2 eggs
2 cups of sugar
2 cups of cake flour
2 tbsp apricot jam
1 pinch salt
2 tsp vinegar
2 tsp soda bicarbonate
2 cups of milk
2 tbsp butter
For the sauce:
1 ½ cups of milk
1 ½ cups of sugar
1 cup of water
250 grams of butter
Steps to follow to make this recipe:
To make the batter for the Malva pudding, mix 2 eggs and 2 cups of sugar in a bowl, and keep beating until its texture becomes creamy and light. If beating by hand is difficult for you, you can even whip it in a food processor, or even use an electric beater. Keep beating until the mixture becomes thick and its color becomes lemony.
Add 2 tbsp of apricot jam in this mixture of sugar and eggs, and beat properly to mix.
Now add 2 cups of cake flour, 2 tsp of soda bicarbonate, and 1 pinch of salt, and beat.
Melt 2 tbsp of butter in the microwave and then add 2 tsp of vinegar in it.
Add this to the mixture of eggs, and pour in milk while beating it.
Your microwave should be able to reach 180˚C/ 350˚F. Some microwaves become very hot at this temperature. Sometimes, you may need to turn it down to 170 or 160˚C to save your pudding from burning.
You can adjust the temperatures as per your own microwave oven.
Grease a microwave-safe dish of 25x30cm, pour this mixture in it, and bake in the microwave for 60 minutes at 350˚C.
While the cake is being baked, you can make the sauce. Boil all the ingredients required to make the sauce in the microwave for 10 minutes on high. Keep stirring after every 2 minutes.
Once you see the cake cooked, stab it all over using a skewer. The cake is done when you can see it well-risen and turned brown in color

Serve this delicious Malva Pudding with custard or fresh cream. If you want to further enhance it, you can even add some vanilla ice cream to it. This will be a sure attraction specifically for kids.
A Malva Pudding is known for its spongy caramelized texture.
