Grilled Pineapple Teriyaki Chicken Skewers are a summer dinner recipe with grilled pineapple, peppers, onions, and chicken glazed with a sweet and salty homemade teriyaki sauce.
GRILLED PINEAPPLE TERIYAKI CHICKEN SKEWERS
These easy Grilled Pineapple Teriyaki Chicken Skewers make an amazing summer dinner recipe.
16 oz Chicken breast cubed
½ a Pineapple cored and cubed
1 Onion large, cut into squares
2 Green peppers cut into squares
1/4 c Soy sauce,, reduced-sodium
1/4 c Water
1 Tbsp Cornstarch
5 Tbsp Honey
1 tsp Ginger
1 clove Garlic
INSTRUCTIONS TERIYAKI SAUCE
Whisk together all ingredients except honey.
Bring to a boil in a small saucepan. Reduce heat and cook for 5-7 minutes or until liquid thickens.
Whisk honey in.
Soak skewers in water for at least 30 minutes.
Pour half of the teriyaki sauce in a bowl and add chicken stirring until the chicken is well coated.
On each skewer place green pepper slices, onion slices, two cubes of chicken (about 2 oz of chicken per skewer), and 2-3 pineapple cubes.
Place the skewer on hot grill and cook for 5 minutes on each side or until chicken is cooked through.
Before serving brush the remaining teriyaki sauce over the skewers.
